One of my memorable outings was visiting a waterfall that involved a challenging 200-step hike, a true test of endurance but rewarding with stunning views. Although the trail wasn't wheelchair accessible, it reminded me of the importance of physical activity and getting outside to refresh the mind. Beyond hiking, I made sure to sample local delicacies. Mango ice cream took center stage, offering a delightful treat that showcased the unique qualities of mangoes from the Philippines and Thailand. The finer fibers, sweeter taste, and juicier meat of Philippine mangoes made quite an impression compared to others. Exploring local farms, like a rice and mango farm, gave me a deeper appreciation for the hard work behind these flavors. These simple but meaningful adventures not only helped me stay active but also brought joy and a fresh perspective during a challenging time.
