Bourbon BBQ Bacon Cheeseburger Meatball Subs:
Ingredients:
For the Meatballs:
1 pound ground beef
1/2 pound bacon, cooked and crumbled (reserve some for topping)
1/2 cup breadcrumbs
1 large egg
1/2 small onion, finely diced
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
For the Sauce & Assembly:
1 cup bourbon BBQ sauce (store-bought or homemade)
4 hoagie rolls or sub buns
1 1/2 cups shredded cheddar cheese (or slices)
Extra cooked bacon, crumbled (for topping)
Fresh parsley or chives, chopped (optional, for garnish
Instructions:
1. Cook the Bacon:
Cook the bacon until crispy. Drain on paper towels and crumble. Reserve half for mixing into meatballs and half for topping the subs.
2. Prepare the Meatballs:
In a large bowl, combine ground beef, half of the crumbled bacon, breadcrumbs, egg, onion, garlic, Worcestershire, salt, and pepper.
Mix until just combined (don’t overmix).
Shape into 1 1/2-inch meatballs.
3. Cook the Meatballs:
Preheat oven to 400°F (200°C).
Place meatballs on a parchment-lined baking sheet and bake for 18–20 minutes, or until fully cooked.
4. Glaze the Meatballs:
In a skillet, warm bourbon BBQ sauce over medium heat.
Add the cooked meatballs and toss until coated and sticky
5. Assemble the Subs:
Lightly toast the hoagie rolls.
Place 3–4 saucy meatballs in each roll.
Top with shredded cheddar cheese, extra bacon crumbles, and a drizzle of more BBQ sauce.
Return to the oven for 3–4 minutes, until cheese melts.
6. Serve:
Garnish with parsley or chives if desired.
Serve hot with extra BBQ sauce for dipping.
