Chicken Rotel 🍗🧀
Ingredients:
-Chicken thighs
-Rotel
-Spaghetti noodles
-2 cups heavy whipping cream
-1 can cream of chicken/mushroom
-½ block cream cheese
-Cheddar/mozzarella blend
-Bell peppers & onions
Seasonings:
Chicken Pollo, Tony Chachere’s, garlic powder, onion powder, Sazon, Adobo, smoked paprika, Italian seasoning, white pepper, Season All & dry ranch
Quick Directions:
1. Boil chicken with peppers, onions and seasonings until fork-tender. Remove, shred chicken, and set aside.
2. Cook spaghetti in the same seasoned chicken water until al dente. Drain and place in cold water to stop cooking.
3. In the same pot, add heavy cream, Rotel, cream of chicken/mushroom, ½ block cream cheese, cheese and seasonings. Stir until creamy and well combined.
4. Mix in the shredded chicken, peppers, onions and noodles.
5. Pour into a baking dish, top with more cheddar/mozzarella, then sprinkle with Season All and dry ranch.
6. Bake at 400°F for 20 minutes, then broil for about 5 minutes until golden and bubbly.
