Birria Chicken Tacos Crockpot Recipe

Ingredients

1 tsp black peppercorns

1 tsp coriander seed (or seasoning)

1 bay leaf

1 cinnamon stick

2 lbs boneless skinless chicken thighs

2 Tbsp avocado oil

1 yellow onion finely chopped

4 cloves garlic minced

2 cups chicken broth

2 Tbsp apple cider vinegar

2 Tbsp tomato paste

1 Birria seasoning packet

For Serving

Corn Tortillas (or whatever you like)

Pepper jack cheese

Fresh onion

Cilantro

Lime

Directions:

Blend together:

• 2-3 chipotle peppers in adobo

• 1 roasted red bell pepper (optional but amazing)

• 4 cloves garlic

• 1 cup onion

• 2 cup chicken broth

• Chipotle Tobacco sauce (add what you think you can handle)

Put chicken Thighs in crockpot and strain the blended sauce on top. Add seasoning, cinnamon stick, tomato paste, coriander seasoning, peppercorns, bay leaf, and apple cider vinegar. Mix~

Cook for 8 hours (recommend) or 4 hours.

Once finished shred chicken. Heat up a pan with oil. Dip tortilla in sauce (I just do 1 side pan down) Add in this order to your tortilla:

-Cheese

-Onion

-Cilantro

-Chicken

-Cheese

Pam fry and then you’re done! You can get a little bowl of the sauce to dip them in and a lime 🍋‍🟩
