8 hours later & one step closer!! After letting it bulk ferment for about 5 1/2 hours, I cut the dough in 1/2 to make 2 loaves, then started shaping them! I put each loaf into its own homemade banneton basket & into the fridge to let cold proof until my Dutch oven gets delivered!!

Read morePicking up right from where I left off with shaping, I wanted to dive a little deeper into why this step, and the entire process, is so crucial for great sourdough: it's all about gluten structure! Many of us just follow the steps, but understanding what's happening to the dough beneath your hands can truly elevate your bread-making game. So, what exactly is gluten structure? Simply put, it's the elastic network formed when two proteins in flour, glutenin and gliadin, combine with water and are developed through mixing and kneading. In sourdough, this development starts early, even during the autolyse phase, and continues vigorously throughout bulk fermentation, especially with stretch and folds. This is the '8 hours later' part I mentioned โ€“ that long bulk ferment allows the gluten network to strengthen and become more organized, trapping the gasses produced by your sourdough starter. But the magic really comes together during shaping. This isn't just about making a pretty round or oval; it's about taking that developed gluten network and creating tension. When you shape your dough, you're essentially stretching the outer layer tightly around the inner mass, like pulling a skin over it. This surface tension is absolutely vital. A strong, taut gluten skin is what gives your loaf the ability to hold its shape during baking and contributes significantly to that glorious 'oven spring' โ€“ where your loaf dramatically expands in the hot oven. Without a well-developed and properly tensioned gluten structure, your bread might spread out flat instead of rising upward. After shaping, the dough goes into its banneton for a cold proof, just like my 'BREADY WHITE'S 1ST LOAF Shaping & Cold Proof'. The cold temperature in the fridge slows down the fermentation process, allowing the flavors to deepen and the gluten structure to relax and consolidate even further. The banneton plays a key role here, supporting the dough's shape and tension as it chills, preventing it from spreading. It's a crucial step that contributes to both texture and flavor. How do you know if you've developed enough gluten? A common test is the 'windowpane test.' Take a small piece of dough and gently stretch it between your fingers. If you can stretch it thin enough to see light through it without tearing, your gluten structure is well-developed! It takes practice to get a feel for the dough, but paying attention to its elasticity and how it holds its shape during shaping will give you great clues. For anyone attempting their first sourdough, understanding and mastering this gluten development is a huge step towards achieving that perfect crumb and crust.
