Cucumber Chickpea Salad, so good!

I’ve seen this salad all over TikTok but I’m such a picky eater so I had to modify it to my liking. I make this salad a few different ways depending on how much time I have to pack my lunch or just what I’m feeling.

Here’s how I made this salad for my quick lunch.

-Slice the cucumbers then cut them in half, dice up the peppers, carrots, and onions.

-SEASONNNN the chickpeas! I use olive oil, onion powder, garlic powder, black pepper, crushed red pepper flakes, thyme, and coriander. Oven roast for 25 mins for that crunch at 400 degrees.

-Season the veggies with the same seasonings as the chickpeas(not too much).

-Break up some pita chips and pair with oil and red wine vinegar or a Greek dressing. Top with feta cheese and…
