Quick & Easy Chicken Flautas 🫶🍋⬇️

****Ingredients:

• 2 shredded cooked chicken breast (rotisserie works great!)

• 1 tsp of salt

• ½ tsp of garlic parsley

• queso fresco

• 10 small corn tortillas

• Oil for frying

***boil chicken breast until chicken falls apart easily with a fork.

Shred the chicken you can add more salt if needed.

**microwave tortillas for 30-45 seconds so they are soft and easy to roll 😃

**Add chicken to tortillas and roll. Then in a pan add oil and leave at medium heat.

**fry flautas for 2-3 mins on each side or until golden brown.

Drain extra oil from flautas then plate it with rice 🍚

You can add salsa verde, queso fresco and sour cream on top with guacamole 🥑

When I first started making them, I sometimes struggled with the tortillas breaking, or getting them perfectly golden. So, here are my personal tips to elevate your homemade chicken flautas. First, let's talk about those tortillas. The recipe mentions microwaving them, which is crucial! But I've found that wrapping them in a damp paper towel before microwaving for 30-45 seconds really makes them pliable and less likely to crack when you roll them. It’s a game-changer! Also, don't overfill them – a good tablespoon or two of shredded chicken is usually enough to get a nice, tight roll without bursting. Secure them with a toothpick if you're worried, but usually, the seam-side down in the hot oil works perfectly. Speaking of oil, getting the temperature right is key for that amazing crispiness. I usually aim for medium-high heat, and I test a tiny piece of tortilla first. If it sizzles gently, you’re good to go. Don't overcrowd your pan, or the oil temperature will drop, leading to soggy flautas instead of beautifully golden ones. Fry them in batches, and once they're done, immediately transfer them to a plate lined with paper towels to drain any excess oil. This ensures they stay super crispy – nothing worse than a greasy flauta! Now, for serving! The recipe suggests rice, salsa verde, queso fresco, sour cream, and guacamole, which are all fantastic. But why stop there? I love to set up a little 'flauta bar' for my family. Besides salsa verde, I often make a fresh pico de gallo with diced tomatoes, onions, cilantro, and a squeeze of lime – it adds such a vibrant, fresh kick! A dollop of creamy avocado crema (just blend avocado, sour cream/Greek yogurt, lime juice, and a pinch of salt) is another favorite alternative to plain guacamole. Sometimes, I sprinkle a little cotija cheese on top instead of queso fresco for a saltier, crumbly texture. And don't forget some thinly sliced radishes for a refreshing crunch! If you're looking to mix things up, these flautas de pollo are incredibly versatile. While chicken is my go-to, I’ve experimented with other fillings too. You could try adding some sautéed onions and bell peppers to your shredded chicken for extra flavor. Or, for a vegetarian option, a mixture of seasoned mashed black beans and cheese makes a delicious alternative. I've even made them with a simple potato and cheese filling – so good! For a slightly healthier twist, you can totally bake these instead of frying. Just preheat your oven to 400°F (200°C), lightly brush the rolled flautas with a little oil (or use cooking spray), and bake for about 15-20 minutes, flipping halfway, until they’re golden and crispy.
