Carne en su Jugo is a beloved dish from the Jalisco region of Mexico, known for its rich, juicy flavors and comforting qualities. This dish combines tender beef cooked in its own juices with crispy bacon, a vibrant homemade salsa verde, and a variety of fresh garnishes like green onions, radishes, jalapeños, and serrano peppers which add layers of flavor and texture. The use of ranchera beef or finely diced meat ensures that the dish remains budget-friendly while still delivering authentic taste. Chef Merito Meat Seasoning is commonly used to enhance the meat's savory depth, but you can also use your favorite seasoning blend to customize the flavor. Salsa verde plays a crucial role in this recipe, made from boiling green tomatillos and serrano peppers until tender, then blending them with white onion, garlic, cilantro, and chicken bouillon to create a tangy and aromatic sauce. Using the water that the tomatillos cooked in helps to retain maximum flavor. The method of frying bacon until crispy and using some of the fat to sauté green onions and chiles adds a smoky note to the dish, complementing the juicy beef. Adding the salsa verde to the meat juices and simmering for 15 minutes allows the flavors to meld beautifully. Topping the dish with fresh cilantro, browned green onions, fried chiles, and crunchy radishes provides a fresh contrast and adds more complexity to the dish. This hearty and vibrant meal is typically served with beans, making it a satisfying option for lunch or dinner. For those exploring Mexican cuisine or looking to recreate an authentic staple, this Carne en su Jugo recipe offers a perfect balance of savory, spicy, and fresh elements that highlight the richness of Mexico’s culinary traditions. Consider pairing this dish with warm tortillas or serving it alongside a simple Mexican rice to complete the experience. For a milder version, adjust the amount of serrano and jalapeño peppers in the garnish and salsa. Overall, Carne en su Jugo is a wonderful dish for those who appreciate traditional Mexican flavors and want a meal that is both comforting and rich in cultural heritage.
