Dry:
• 2½ cups all-purpose flour
• 2½ tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
Wet:
• ¾ cup unsalted butter, softened
• 1¾ cups sugar
• 4 egg whites (room temp)
• 1 whole egg
• 1 tbsp vanilla
• 1 tsp coconut extract (important for strong flavor)
• 1 cup canned coconut milk (full fat, shaken)
• ½ cup sour cream
• 1 cup sweetened shredded coconut
