Skirt Steak with Chimichurri, Veggies & Cheesy Garlic Bread

Ingredients
* 4 oz skirt steak — 170 cal
* 1/2 onion, sliced — 15 cal
* 1/2 red bell pepper, sliced — 19 cal
* 1 tbsp olive oil — 120 cal
* Handful of parsley — 5 cal
* 1 tbsp garlic & herb butter spread — 70 cal
* 1/4 cup shredded mozzarella cheese — 80 cal
* 1/2 naan bread — 140 cal
* 1 tbsp red wine vinegar — 0 cal
* Chili powder, to taste
* Salt, to taste
* Black pepper, to taste
* Garlic powder, to taste
Instructions
1. Preheat oven to 350°F. Slice the onion and red bell pepper, and finely chop the parsley.
2. Season the skirt steak with garlic powder, salt, black pepper, and chili powder. Let it marinate in the fridge for about 30 minutes.
3. Heat a pan with a little cooking spray and sauté the onions and bell peppers. Season with salt, black pepper, and chili powder to taste. Once cooked, set aside.
4. Make the chimichurri sauce:
In a blender, combine olive oil, red wine vinegar, parsley, salt, pepper, and a splash of water. Blend until smooth, then refrigerate until ready to serve.
5. Prepare the garlic bread:
Spread the garlic & herb butter over the naan bread, top with mozzarella cheese, and bake for about 8 minutes, or until golden and melted.
6. Using the same pan, cook the skirt steak to your preferred doneness.
