This is what I do with my leftover salmon…
I was today years old when I found out what Ive been eating my whole life is called salmon croquettes. Filipinos have a dish that is essentially the same but it’s called “Tortang Salmon” it translates to salmon omelet.
Ingredients:
2 Salmon Filets PRO TIP USE SOCKEYE SALMON FOR RICHER FLAVOR
¼ Green Bell Pepper
¼ Red Bell Pepper
½ White onion
3 Eggs
About 100g of egg whites PRO TIP ADD EGG WHITES TO INCREASE PROTEIN
1 Packet of Crackers (Helps with keeping them together
1 TBS GARLIC POWDER
Directions:
Step 1: Chop up your veggies
Step 2: Smash down Salmon and add all your veggies, eggs, egg whites, crackers, and garlic powder
Step 3: Mix and Fry on Pan with a Tbs of olive oil on low med. Shape them into circles
Step 4: Once corners cook flip over and cook until golden brown.
Enjoy with some rice and sauce of choice. I personally eat mine with ketchup.
