HOMEMADE HAMBURGER HELPER 🤍🍔
I cut the full recipe is cut in half, so it’s perfect for one with left overs. It would feed two people with little leftovers. If you’re serving 4 then double the amounts 😊
Ingredients:
1/2 box shells pasta
1/2 lb ground beef (or ground turkey)
1 tbsp butter
1 cup half & half (my preference) or heavy cream or whole milk will work too
1/2 cup shredded cheddar cheese
1/2 cup shredded Colby jack cheese
Seasonings:
Salt, pepper, paprika, onion powder, garlic powder
I measure seasonings with my heart!
1. Bring water to a boil in a medium pot for the pasta (make sure to salt the water!) follow cooking time on box
2. While water is coming to a boil, in a large pot brown ground beef, once the meat is fully cooked add seasoning (I would say start with 1/2 a tsp of each and add from there if needed)
3. Pasta should be done by now so drain and rinse with cold water to prevent the pasta from cooking further
4. Remove the cooked meat and set in a bowl to the side
5. Add butter and half & half to the same pot you cooked the ground beef in. Stir frequently until butter is completely melted and milk is warm but not boiling
6. Add cheese and stir until the cheese and milk are fully combined and add the same seasonings used in ground beef
7. Add the ground beef back in and sit until combined then add the pasta
8. Serve and enjoy!

Okay, so you’ve tried my easy homemade Hamburger Helper recipe, and now you’re hooked, right? I totally get it! While the basic recipe is amazing, I’ve found so many ways to switch things up and make it even more exciting. If you’re like me, you love experimenting in the kitchen, especially when you can elevate a classic comfort food. First off, let’s talk about those seasonings. My 'measure with your heart' approach is great, but sometimes you want a little more guidance, especially for achieving those 'rich flavor recipes' we all crave. For a truly robust taste, I often reach for a good quality beef or chicken granulated bouillon dissolved in a splash of water, adding it to the ground beef as it browns. It’s a fantastic 'dish enhancer' that deepens the savory notes. Want an 'herb chicken' vibe (even with beef!)? Try adding dried thyme, rosemary, and a bay leaf to your ground meat while it cooks. Just remember to remove the bay leaf before serving! For a little kick, a pinch of smoked paprika or even a dash of adobo seasoning can transform the flavor profile. Don't be afraid to experiment with your spice cabinet! Another thing I love is making this a true 'one-pot' wonder. While my recipe has you set the meat aside, sometimes I just want fewer dishes. If you're okay with a slightly different texture, you can try browning the meat, draining the fat, and then adding the butter and half & half directly to the pot with the meat still in it before adding the cheese. It's a small tweak but saves a pan! Thinking about 'what to make with hamburger meat' beyond the usual burgers? This Hamburger Helper is a perfect answer. But you can also think about transforming it into a 'fiesta recipe' by adding a can of drained black beans, corn, a packet of taco seasoning, and topping with crushed tortilla chips and salsa. Or what about a 'chicken cheddar broccoli bowl' inspired twist? Swap the beef for ground chicken, add some steamed broccoli florets when you add the pasta, and perhaps a sprinkle of red pepper flakes for a zing. It's amazing how versatile ground meat is! Many of you might be wondering about replicating that 'hamburger helper dry mix' taste. The secret to that creamy, saucy consistency without the box often comes down to the fat content in your dairy (half & half or heavy cream works wonders!) and the cheese ratio. Using a blend of cheeses like cheddar and Colby Jack gives it that classic, melty stretch. If you find your sauce isn't thick enough, a quick trick is to make a cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp cold water) and stir it into the simmering sauce until it thickens. And for a 'family recipe,' remember this dish scales beautifully. My original recipe is perfect for one or two with leftovers, but for a family of four or more, simply double or even triple the ingredients! It’s such an adaptable meal, making it an easy go-to when you need a comforting, hearty dinner that everyone will love. Experiment with different pasta shapes too – macaroni, penne, or even rotini can work if you don't have shells! It’s all about making it your own!
