Meet my blueberry cheesecake donut focaccia — and honestly, I’m not sure I’ll ever be able to look at focaccia the same way again.

It starts with that pillowy, soft, airy focaccia dough that gets baked until the top is beautifully golden, the edges are lightly crisp, and the inside stays ridiculously fluffy. But then we take things somewhere a little more decadent…

Imagine the most indulgent blueberry cheesecake you can think of, but instead of sitting on a biscuit base, it’s layered over this gorgeous, chewy, cloud-like focaccia. Then add the sweetness and nostalgia of a glazed donut, because apparently regular focaccia wasn’t doing enough. 😂

The blueberries bring that gorgeous burst of juicy, slightly tart sweetness, while the cheesecake element adds that creamy, rich, tangy contrast that makes every bite feel completely over-the-top. And then there’s that soft, buttery, almost donut-like sweetness running through it all.

It’s sweet, creamy, fruity, buttery, pillowy, golden, and just a little bit ridiculous — which is exactly why I love it.

There’s something so special about turning a classic savoury bake into something completely unexpected. Focaccia is usually associated with olive oil, herbs, tomatoes, flaky salt and all things savoury, but give me a sweet focaccia with blueberries and cheesecake and suddenly I’m questioning why we haven’t been doing this all along.

The texture is probably my favourite part. That beautiful contrast between the golden, slightly crisp exterior and the soft, airy centre, with pockets of blueberry and creamy cheesecake throughout… every bite is basically its own little dessert.

And if you’re wondering whether it actually tastes like a donut, cheesecake AND focaccia all at once — somehow, YES. 🤌🏼

It’s the kind of bake that makes you want to stand in the kitchen and “just have one little piece” before realizing you’ve somehow eaten three.

Perfect with a coffee in the morning, completely acceptable as an afternoon treat, and honestly dangerous if left sitting on the counter unattended. ☕️

Blueberry season deserved something special, and I think we found it. 🫐💜
