Over the years, I’ve found that the key to perfectly fried fish starts with choosing the right kind of fish—opt for fresh, firm fillets such as cod, haddock, or tilapia. Make sure the fish is patted dry using paper towels before seasoning it lightly with salt and pepper. For the coating, a simple mix of flour seasoned with a pinch of paprika and garlic powder adds great flavor without overpowering the fish’s natural taste. Some prefer breading with panko for extra crunch. When it comes to frying, using oil with a high smoke point like vegetable or canola oil is essential. Heat the oil until it’s shimmering hot but not smoking; typically around 350°F (175°C). Fry the fish in small batches to avoid overcrowding the pan, which can lower the oil temperature and make the crust soggy rather than crispy. Each side usually takes about 3-4 minutes depending on thickness. Once golden brown, transfer the fish to a paper towel-lined plate to drain excess oil. Serving your fried fish with a side of homemade tartar sauce, fresh lemon wedges, and perhaps some crispy fries or a light salad completes the meal.
