The Creamiest Egg Salad with Caramelized Onions
Ingredients:
A dozen eggs
2 very large onions, diced
4 tbsp oil
4 tbsp mayo or more depending on your taste
2 tbsp Dijon mustard
1/3 cup fresh dill, chopped
Salt and pepper to taste
Instructions:
I encourage you to customize this salad to your liking. Some may prefer more mayo some less - you do you.
1. Caramelize the onions by heating a pan with oil and cooking the diced onions on medium and once they begin to brown, on low to be sure not to burn them. Onions are ready when they look like the way they do in my reel.
2. While the onions are cooking, boil the eggs until firm inside. Immediately place in a bowl with ice to stop the cooking. Peel the eggs.
3. Separate the egg yolks from the whites and place the yolks in a bowl with mayo, Dijon, dill, salt and pepper. This mixture needs to be throughly mixed until creamy. Adjust with mayo, salt and pepper to your liking.
4. Chop the egg whites. Add them to a bowl with caramelized onions, yolk mixture and mix well. Adjust with salt and pepper to your taste. Enjoy!
