Easy lunch and meal prep
we’re redoing our kitchen so I had to make something that would last a couple days and would be easy to prep, store in fridge, no reheat needed. Overall rating: 10/10:
For the wraps
I bought pre shredded rotisserie chicken from Walmart but feel free to use what works best for you. Mix the chicken, as much shredded Parmesan as you want, and add the Caesar dressing. I didn’t measure. It’s really based on preference. The tortillas need to be room temperature, add a layer of romaine lettuce then top with as much of the chicken filling you want. Fold in the sides of the tortilla then roll from the bottom up.. wrap in aluminum or parchment paper to store.
For the pasta salad
I cooked almost a 2lb box of rotini, bow tie works good too. I cut up 2 cucumbers, an 8oz block of cheese of choice, a whole bag of pepperoni chopped, one container of cherry tomatoes, and a full bottle of Italian dressing. Mix and store.
