Peach Posset 🍑 : an easy, delicious dessert recipe to use those fresh summer peaches at least one more time!
Ingredients:
— 1 quart heavy cream (2 cups)
— 1/2 cup sugar
— 5 tbs lemon juice
— 2 tsp vanilla
Peach puree swirl: blend all ingredients together.
— 2-3 peaches (the scooped out centers)
— 1 tbs sugar
— 1 tbs lemon juice
To prep the peaches, slice them in half and remove the pit. Scoop out a few spoonfuls of the center and save for your puree. After slicing, brush the peach with lemon juice to keep it from browning.
How-to:
1. Add cream, sugar, and vanilla to a saucepan over medium heat. Stir continuously to dissolve the sugar.
2. Continue to heat until it reaches a boil, turn down the heat slightly, and keep at a low boil for 3-5 minutes.
3. Remove from the heat, stir in lemon juice and let cool for 10 minutes.
4. Pour into peach halves or small dishes, and swirl in a spoonful of peach puree.
5. Let chill & set in the fridge for at least 1 hour.
