Shrimp Fajitas

One of my favorite things about this meal is that your dishes are minimal. We are talking about one sheet pan, one small bowl to mix your seasoning, and one cutting board. Plus, I think our family could eat shrimp a different way every day. This will take about 40-45 minutes to prepare.

You'll need:

🫑 1 large bell pepper

🧅 1 large red onion

🍤 a half pound of shrimp (approx. 40 shrimp)

🌯 6 tortillas

● 2 tsps of chili powder

● 2 tsps ground cumin

● 2 tsps dried oregano

● 1 tsp paprika

● 1 tsp garlic powder

● 1 tsp adobo

● 3 tbsp olive oil

● salt & pepper to taste.

1.) Preheat the oven to 425°. Line a sheet pan with aluminum foil. Spray with cooking oil. I use extra virgin olive oil.

2.) Slice onion and bell pepper to your desired cut. I sliced them into strips.

3.) Peel and devein shrimp.

4.) In a small bowl, mix together chili powder, cumin, oregano, paprika, garlic powder, adobo, salt, and pepper. You can also use a store bought fajita seasoning.

5.) Layer peppers, onion, and shrimp in a single layer on your sheet pan.

6.) Toss in olive oil and mix in your seasoning mix.

7.) Bake for 20-25 minutes until shrimp are cooked through and vegetables are soft.
