Season chicken breast with desired seasonings. I use pepper; seasoning salt; and garlic (preferably minced but powder works in a pinch). Drizzle and heat olive oil in pan before placing chicken in pan and cooking completely. Prepare salad as desired on plate or in bowl whichever you prefer. Cut up chicken and add to the top of the salad.
Additional tips/notes:
***My salad picture included
1) Chopped Romaine
2) Bell Peppers
3) Cherry Tomatoes
4) Cucumbers
5) Onion
6) Bacon Pieces
7) Taco Cheese Blend
8) Sunflower Seeds
9) Seasoning Salt, Pepper, Garlic Powder *I prefer this blend of spices to dressing*
** I tossed the salad a few times while making it before adding my chicken on top.
* One Serving ended up being "too much" for me tonight and I saved half of it for lunch tomorrow. I also prepared extra Chicken at the same time to make it again this week when the dinner menu option isn't sounding great for my desire to eat healthier.

... Read moreMaking a fresh chicken salad at home is not only satisfying but also a great way to customize your meals to fit your taste and dietary preferences. One tip I’ve learned is to always season the chicken thoroughly before cooking, much like the pepper, seasoning salt, and garlic powder suggested here. These simple spices add a lot of flavor without extra calories or dressings.
I often use chopped Romaine as a base, which gives a nice crunch and pairs well with a variety of toppings. Adding bell peppers and cherry tomatoes adds color and freshness, while cucumbers and onion add coolness and a slight bite. For some texture, I love including sunflower seeds or nuts — they bring a fun crunch that balances the softness of the chicken.
Instead of traditional dressings, I’ve also found using a seasoning blend like salt, pepper, and garlic powder directly on the salad ingredients can keep flavors light and healthy. Plus, skipping heavy dressings reduces unwanted fats and calories while still keeping the salad tasty.
Preparing extra chicken in advance, as mentioned in the recipe, is a smart move. I often cook enough chicken for several meals ahead, making lunchtime salads faster to assemble and easier to stay on track with healthy eating goals. Additionally, tossing the salad a few times before adding the chicken helps mix the toppings evenly and coats the greens lightly with the seasoning, enhancing every bite.
If you want to experiment, try swapping chicken breast for grilled shrimp or tofu for a vegetarian option. The flexibility of ingredients means you can enjoy variations of this salad all week long, preventing mealtime boredom while keeping nutrition high.
Overall, making your own salad with seasoned chicken and fresh vegetables is an excellent way to enjoy a nutritious, flavorful meal anytime. It’s quick, adaptable, and perfect for those who want a healthy meal without fussing over complicated recipes.
