These egg muffins are quick, nourishing, and easy to elevate with herbs or caviar.
Perfect for a gentle reset.
After New Year’s Egg Muffins
Ingredients:
1 Roma tomato, chopped
2 green onions, chopped
2 red peppers, chopped
3 small pickles, chopped
7 eggs
Salt & black pepper
Cheddar cheese
Fresh dill
Black & red caviar (optional)
Instructions:
Preheat oven to 400°F (205°C)
Evenly distribute chopped veggies in a muffin tin
Whisk eggs with salt and pepper
Pour egg mixture over vegetables
Top with cheddar cheese
Bake for 10 minutes until set
Serve with fresh dill and caviar if desired and enjoy!
