This authentic Spanish chicken recipe showcases the essence of Latino food culture with simple yet flavorful components like fresh chicken, bell peppers, garlic, and cilantro. When preparing this dish, using fresh poultry makes a significant difference in taste and texture, ensuring the meat stays tender during cooking. The step of caramelizing sugar before adding the chicken is a classic technique that adds a depth of flavor and subtle sweetness balancing the savoriness of the spices. Tomato paste and fresh garlic provide a robust base, while Suzzone — a Spanish ingredient often used for seasoning — adds an authentic twist to the dish. Adjusting salt and sugar levels according to taste is key to achieving the perfect balance.
