THE FOLLOWING SAUCES CAN BE USED:
1. Classic Garlic Mojo (Mojo de Ajo)
This is the most traditional pairing in many Caribbean households. It’s sharp, savory, and cuts through the richness of the fried plantain.
• Ingredients: 4 cloves minced garlic, 1/4 cup olive oil, 2 tablespoons lime juice (or sour orange), and a pinch of salt.
• Method: Briefly sauté the garlic in the oil until fragrant (don't let it brown!), then stir in the citrus juice.
2. Creamy Mayo-Ketchup (Salsa Rosada)
A staple in Puerto Rico, this is a crowd-pleaser because it balances sweetness with a little tang.
• Ingredients: 2 parts mayonnaise, 1 part ketchup, a dash of garlic powder, and a drop of hot sauce.
• Method: Simply whisk together until smooth.
3. Cilantro Lime Crema
For a brighter, fresher profile that leans toward a Mexican-inspired fusion.
• Ingredients: 1/2 cup sour cream or Greek yogurt, a handful of chopped cilantro, lime zest, and lime juice.
• Method: Blend or finely chop and mix until incorporated.
A Quick Tip for your Video/Recipe
If you want to keep the tostones extra crispy for the camera, some cooks recommend a quick saltwater dip between the first and second fry. It helps the exterior get that perfect "crunch" while keeping the inside tender! #plantain #greenfood #friedplantains #spanishfood #caribbeandish
Tostones, also known as tosten, are a delicious and versatile dish loved throughout the Spanish-speaking Caribbean and Latin American countries. They are made from green plantains that are fried twice to achieve a perfect balance of crispy exterior and tender interior. What makes tostones such an appealing dish is its simplicity as well as the flexibility to pair it with various proteins like fried eggs, chicken, or seafood, making it a complete and satisfying meal. From my personal cooking experience, one key to great tostones is using plantains that are firmly green with no yellow spots, as they fry up crispier and less sweet than ripe plantains. Also, the technique of pressing them between fryings using a wooden or steel tostonera ensures they cook evenly and develop that characteristic flat shape. If you don’t have a tostonera, a heavy glass or bottom of a flat pan works well too. For additional flavor, experimenting with different dipping sauces can elevate your tostones. The classic garlic mojo (mojo de ajo) adds a savory, zesty punch that cuts through the fried richness. Mayo-ketchup (salsa rosada) offers a creamy, mildly sweet contrast, popular in Puerto Rico and beyond. Another fresh twist is cilantro lime crema, which brings brightness and a tangy note inspired by Mexican cuisine. An insider tip that I found helpful is dipping the tostones briefly in salted water after the first fry. This step helps them achieve an extra crispy texture on the outside while keeping the inside tender and moist. Just be sure to pat them dry thoroughly before the second fry to avoid excess oil splatter. Tostones are excellent for any time of day – whether you enjoy them as a breakfast side with eggs, a snack with vibrant hot sauce, or as part of a larger dinner plate. With just a few simple ingredients and these easy steps, you can bring a taste of Caribbean and Spanish culture into your home kitchen. Don’t hesitate to customize the dish with your preferred accompaniments and sauces to make it your own!
