Material
Minced chicken... 200g
Lotus root... 150 g
Ooba: 10 sheets
A white... 1 egg
A spoon of potato starch
A little salt and pepper
B soy sauce... 2 tablespoons spoon
B Sugar, mirin, sake... 1 spoon each
Salad oil... appropriate amount
How to make
1. Finely chop the lotus root. Shred the perilla.
2. In a bowl, add minced chicken lotus root, part of shiso leaves, and A and mix well.
3. Heat the salad oil in a frying pan and put it on the fire.
4. When both sides are browned, reduce heat to medium low and add B and entangle the whole so that it does not burn.
5. Serve in a bowl and add the sesame seeds and the remaining perilla leaves if you like.
れんこん大葉つくね、作り方はシンプルなのに「食感」と「香り」で満足感が出るので、うちの定番になりました。初めて作ったときに迷ったポイントをまとめます。 まず、れんこんは“みじん切り”のサイズ感で食感が変わります。私は粗め（5mm角くらい）を混ぜるとシャキシャキが強く出て好き。逆に細かくしすぎると食感が弱くなるので、「れんこん 150g」は半分だけ粗め、半分は細かめ…みたいに刻み方を分けても食べやすいです。水にさらしすぎると風味が抜けるので、軽くすすぐ程度にしています。 大葉は“たっぷり10枚”が本当にいい仕事をします。肉だねに混ぜる分は千切りでもOKですが、焼いている間に香りが飛びやすいので、仕上げ用に少し残しておくのがおすすめ。最後にのせるだけで一気に大葉感が戻って、さっぱり食べられます。 成形は手に油（サラダ油）を少しつけるとくっつかず丸めやすいです。厚みがあると中まで火が通りにくいので、丸めたら軽く押して平たくすると時短に。焼き方は「両面こんがり焼き色」がつくまで触らないのがコツで、ここで崩れにくくなります。 甘辛だれ（醤油大さじ2＋砂糖・みりん・酒各大さじ1）は焦げやすいので、火は弱めの中火にしてから入れると失敗しにくいです。入れたら手早く全体に絡めて、照りが出たらすぐ火を止めるイメージ。仕上げに“ごま”を振ると香ばしさも足せます。 アレンジも便利で、鶏ひき肉がない日は豚ひき肉でも作れました（少しコクが出ます）。お弁当用ならタレを控えめにして、食べる直前に絡めるとベチャつきにくいです。れんこん×大葉の組み合わせ、想像以上に「人気」なのが納得の味でした。
