Red Velvet Love Letters
Red Velvet Belgian Waffles with Cheesecake Filling & Berries 💕✨
Making these was SO much fun—and they’re perfect for a sassy Valentine’s Day breakfast! Here’s how I did it:
For the Waffles
• 🥞 Mix your fave pancake batter.
• 🎂 Add about 1 cup of boxed red velvet cake mix (trust me, this combo slaps).
• 💃 Spoon regular pancake batter AND red velvet batter into the waffle iron, swirling for that pretty marbled look.
• 🔥 Cook like normal (your kitchen will smell heavenly).
For the Cheesecake Filling
• 🧀 Beat 8 oz of softened cream cheese.
• 🍋 Add 1/3 cup granulated sugar, 3 tbsp freshly squeezed lemon juice, and 2 tbsp leftover Greek yogurt.
• 🍍 I tossed in a splash of my leftover pineapple-ginger simple syrup because, why not?
💡 Fun Tip: Spoon the filling into a Ziploc bag, cut the corner, and voilà—fancy piping bag for layering cheesecake goodness!
Assembly
• 🥪 Layer the waffles with cheesecake filling and fresh-sliced berries.
• 🍫 Top with whipped cream, powdered sugar, chocolate or caramel sauce, a sprig of mint, or all of the above—because, why not be extra?
