It was also such a pleasure meeting Chef Kentaro in person and learning his tips & tricks behind making a perfect Mapo Tofu.

Having visited myself, I was particularly impressed by the Crab Roe Tofu, where silky tofu is delicately paired with a rich crab roe sauce that bursts with umami flavor. The Szechwan Twice-Cooked Pork Belly had just the right balance of crispy skin and tender meat, coated in a complex, spicy sauce that truly speaks to the region's culinary traditions. One memorable moment was meeting Chef Kentaro and getting an insider insight into perfecting Mapo Tofu. He shared tips on maintaining the tofu’s silkiness and balancing the numbing Sichuan peppercorn heat with the rich meat sauce, which adds layers of flavor without overpowering the dish. The experience felt both intimate and educational. Chen's Kitchen manages to bring Michelin-starred sophistication into a relaxed setting, making these luxurious flavors approachable to everyone. Besides the star dishes, do try the Fatty Egg Garlic Chahan and Hot & Sour Soup to round out your meal.
