Dinner tonight is…

Adobo pork.

I don’t measure anything but here’s how I make it:

I usually make it with pork shoulder but I didn’t have that so I just used pork tenderloin.

Chop up the pork into bite sized pieces and put it in a pot with a neutral flavored oil and let it start cooking. Stir the pork and add in black pepper, salt, about 3 cloves of chopped garlic and 2-3 bay leaves. Stir again. Then add in 1/3-ish cup of soy sauce and 1/3- ish cup of vinegar. (I have used rice vinegar, apple cider and white. I like rice vinegar the best but I will put a splash of apple cider with it) cover the pot and let it simmer for about an hour. Once done simmering add in about 2 Tbsp of brown sugar and mix it. Reduce heat again so the sugar doesn’t burn.

Serve over rice.

I like a little heat so I add pepper sauce on mine.
