Chicken & Dumplings

Yesterday, I made the most comforting chicken and dumplings from scratch! Started with a whole chicken, onions, carrots, celery, and herbs simmering for 5 hours in the crock pot to make rich stock. Pulled the chicken, cooked down veggies in a Dutch oven until soften, then added 10 cups of that homemade stock, Bear Creek soup mix(I like using the soup mix because when the dumplings are gone I got soup for the next day), frozen veggies (microwaved to get them started), and a small can of cream of chicken soup. Stirred it all up and brought it to a simmer. Meanwhile, whipped up cheddar bay biscuits and added the butter seasoning packet to the mix. Added the chicken back, dropped biscuit spoonfuls in, covered, and cooked for 12 minutes. Pro tip: use a bigger pot than I did—mine bubbled over!
