Cinnamon Honey Bun Swirl Cheesecake 😋🥮🍰
Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 teaspoon cinnamon
For the cheesecake filling:
24 oz cream cheese, softened
1 cup granulated sugar
1/4 cup brown sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1/2 cup heavy cream
2 teaspoons cinnamon
For the honey bun swirl:
1/2 cup brown sugar
1 tablespoon cinnamon
2 tablespoons melted butter
For the glaze:
1 cup powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
Directions:
Prepare the crust: Preheat the oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, melted butter, and cinnamon. Mix until well-combined. Press the mixture into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
Make the cheesecake filling: In a large bowl, beat the softened cream cheese, granulated sugar, and brown sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, sour cream, heavy cream, and cinnamon until fully combined.
Create the honey bun swirl: In a small bowl, mix together the brown sugar, cinnamon, and melted butter to form a thick paste. Set aside.
Assemble the cheesecake: Pour half of the cheesecake batter over the prepared crust. Drizzle half of the honey bun swirl mixture over the batter, and use a knife to gently swirl it through the cheesecake. Pour the remaining cheesecake batter on top and repeat the swirling process with the rest of the honey bun mixture.
Bake the cheesecake: Bake the cheesecake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour. Once cooled, refrigerate for at least 4 hours or overnight.
Glaze the cheesecake: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the chilled cheesecake before serving.
