Ingredients:

✅ For the Knafeh:

500 grams of kataifi (shredded phyllo dough)

250 grams unsalted butter, melted

400 grams unsalted fresh cheese (like mozzarella or akkawi cheese), grated or crumbled

✅ For the Syrup:

2 cups granulated sugar

1 cup water

1 tablespoon lemon juice

1 teaspoon rose water (optional)

1 teaspoon orange blossom water (optional)

✅ For Garnish:

1/4 cup ground pistachios

Fresh cream or ice cream (optional)

Instructions:

① Prepare the Sugar Syrup:

In a saucepan, combine the sugar, water, and lemon juice. Bring the mixture to a boil over medium heat, stirring occasionally. Once it starts boiling, reduce the heat and let it simmer for about 10 minutes until slightly thickened. Remove from heat and stir in the rose water and orange blossom water, if using. Let the syrup cool.

② Prepare the Kataifi Dough:

Preheat the oven to 350°F (180°C). Using your hands, separate the shredded kataifi dough strands and place them in a large bowl. Pour the melted butter over the dough and mix well until the dough is evenly coated with butter.

③ Assemble the Knafeh:

Grease a round baking pan (around 10-12 inches in diameter) with butter or ghee. Press half of the buttered kataifi dough firmly into the bottom of the pan to form an even layer. Spread the grated fresh cheese evenly over the dough. Then, cover the cheese with the remaining kataifi dough, pressing it down gently.

④ Bake the Knafeh:

Place the assembled knafeh in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.

⑤ Add the Syrup:

Once baked, remove the knafeh from the oven and immediately pour the cooled sugar syrup evenly over the top. Allow the knafeh to soak up the syrup for a few minutes.

⑥ Garnish and Serve:

Sprinkle the ground pistachios over the knafeh. Serve it warm with fresh cream or ice cream on the side, if desired.
