No Bake cheese cake
I finally tried the no bake Biscoff cheese cake & was so tasty. #biscoffnobakecheesecake #simpledessertrecipes
Ingredients:
For the crust:
Biscoff cookies (crushed)
unsalted butter, melted
For the filling:
2 cups cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup heavy cream cold
1/2 cup Biscoff spread (smooth)
For the topping:
3Biscoff spread melted with butter
Crushed Biscoff cookies
Instructions:
1. Make the crust:
Mix the crushed Biscoff cookies with melted butter until it resembles wet sand.Press the mixture firmly into the base .Chill in the fridge for at least 30 minutes.
2. Make the filling:
In a large bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla; mix until well combined. And add Biscoff spread and mix until fully incorporated.
In a separate bowl, whip the cold heavy cream until stiff peaks form.Gently fold the whipped cream into the Biscoff mixture until smooth and fluffy.
3. Assemble:
Pour the filling over the chilled crust and smooth the top.Chill in the fridge for at least 6 hours, preferably overnight, until set.
4. Decorate:
Drizzle melted Biscoff spread over the top.Sprinkle crushed Biscoff cookies around the edges or center if desired.
2 things I will adjust on the next try;
Add sour cream since it was too sweet for me
Use an springform pan because the one I used was not able to cut the cheese cake easily
