For the Shrimp

1 lb large shrimp, peeled and deveined (tails on)

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder (optional)

1 tbsp cornstarch (to lightly dust the shrimp)

1 cup all-purpose flour

1/2 cup cornstarch

1 large egg

1 cup ice-cold sparkling water (or ice-cold regular water)

A few ice cubes (to keep the batter cold)

For Frying

Vegetable oil for deep frying

Optional Dipping Sauce

1/4 cup soy sauce

1 tbsp mirin or honey

1 tbsp rice vinegar

1 tsp grated ginger

1 tsp sugar

Sliced green onions or chili flakes (optional)

Prep the Shrimp:
