Ingredients:

- 3 lbs cubed beef chuck or stew meat

- 1 tbsp each: garlic powder, onion powder, cumin, chili powder, smoked paprika, freshly ground black pepper

- 1 tsp kosher salt

- 1/4 cup unbleached flour

- 3 tbsp extra virgin olive oil

- 4 tbsp unsalted butter

- 1/4 cup sliced garlic

- 1 cup diced sweet onion

- 2 cups chopped celery

- 1 cup diced carrot

- 2 cups beans (your choice)

- 1 cup sliced jalapeños

- 1 cup beef stock

- 1 cup stewed tomatoes

- 1 cup premium hot sauce

1. Season & Sear Meat

- Coat meat with 3/4 spice mix + flour

- Sear in skillet over medium-high heat 5-6 mins until dark brown

- Transfer to roasting pan

2. Build Base

- Melt butter in same skillet

- Add garlic, onion, jalapeños - season with remaining spices

- Cook until caramelized

- Deglaze with beef stock, add to meat

3. Assemble & Cook

- Top meat with:

▪ Celery

▪ Stewed tomatoes

▪ Beans

▪ Hot sauce

- Season, cover, bake 90 mins at 325°F (160°C) until fork-tender

4. Serve

- Bowl with shredded cheese, onion, cilantro, crema
