I always look for sturdy, restaurant-style chips that can hold up to all the yummy toppings without getting soggy too fast. Some thicker, slightly salted chips are my go-to, as they provide a great base for everything from the seasoned meat to the creamy sour cream. Beyond the amazing ground beef and turkey mixture with those flavorful sautéed onions, garlic, and bell peppers, the cheese is where you can really get creative! While simply sprinkling shredded cheddar and Monterey Jack is classic, I sometimes love to make a quick homemade cheese sauce. A simple roux with butter, flour, milk, and your favorite melting cheese (like Velveeta or a blend of cheddar and American) takes these nachos to the next level of gooey goodness. It ensures every single chip gets coated in cheesy delight! Speaking of toppings, while my original recipe highlights fresh shredded lettuce and diced tomatoes, don't stop there! Think about adding some thinly sliced jalapeños for a kick, black beans or refried beans for extra heartiness, or even some fresh corn for sweetness and crunch. A dollop of homemade guacamole or a scoop of vibrant salsa can truly elevate the flavors. And don't forget a sprinkle of fresh cilantro or green onions for that extra pop of color and freshness. The beauty of homemade nachos is that you can customize them exactly to your family's taste! To achieve nacho perfection, layering is key. Instead of just piling everything on top, try building your nachos in layers. Start with a base of chips, then a sprinkle of cheese, a layer of your seasoned ground meat mixture, more cheese, and then repeat. This ensures every chip gets a fair share of the deliciousness.
