Catfish Atchafalaya
INGREDIENTS
—4 sticks of butter 🧈
—Holy trinity - 1 bell pepper, 1 onion, 2 celery sticks
—2 tbsp of garlic 🧄
—2 tbsp of Worcestershire sauce
—2 tbsp of Louisiana hot sauce
—Seasonings: paprika, Cajun seasoning, salt & pepper (to taste)
—1/2 c of corn starch
—4 c of cold water or cold chicken stock; divided
—2 cans of cream of mushroom
—2 lbs of Louisiana crawfish 🦞
—1 cup of green onions
—12 fried catfish filets
—Bourbon maple corn (optional)
CRAWFISH ETOUFFEE DIRECTIONS
1. Brown 4 sticks of butter in your magnalite or soup pot.
2. Sauté and cook down holy trinity and garlic.
3. Mix in sauces & seasonings.
4. Add 2 cups of cold water or chicken stock.
5. Mix in corn starch.
6. Mix in cream of mushroom.
7. Mix in 2 cups of cold water or chicken stock.
8. Stir in crawfish and green onions.
CATFISH ATCHAFALAYA DIRECTIONS
1. Serve Etouffee over a bed of rice.
2. Top with fried catfish.
3. Add a little more Etouffee on top of catfish.
4. Add a side of bourbon maple corn (optional).
5. Serve with buttery, toasted French bread.
