This shop opened on October 1st.
It is the oldest salt ramen with excellent access from Hakodate Station, and has been reconstructed to the current taste by adding oysters and shijimi!
You can feel the taste of oysters and freshwater clam in the soup which looks simple and clear 😋
It seems that the owner is enthusiastic about research and tries to find a "more delicious cup" every day... That passion is transmitted firmly from the taste 😳
Actually, they also have daily ramen that changes with the purchase every day, and this time it was octopus anchovy ramen, but it seems that there are also ones using mackerel and flatfish 😳
It's nice to be able to enjoy various flavors without getting bored even if you come every day!

「養和軒ぷらす」を初めて行く人向けに、私が行く前に知っておくと便利だったポイントをまとめます。店名で検索しても情報が少ないことがあるので、迷わず楽しめるように。 まずアクセスは本当に楽で、函館市電の松風町から徒歩1分。函館駅周辺で「サクッと塩ラーメンを食べたい」時に選びやすい立地でした。外観は赤いのれんが目印で、初見でも見つけやすい印象。観光の合間に寄るなら、移動時間が短いのはかなり助かります。 看板メニューの「牡蠣しじみ塩ラーメン」は、透き通ったスープが見た目からきれいで、ひと口目に牡蠣としじみの旨みがふわっと来ます。こってり系ではなく、最後まで飲みやすい“上品な塩”。塩ラーメンが好きな人ほど刺さるタイプだと思いました。トッピングは鶏チャーシューや味玉、ネギなどで、あっさりなのに満足感が出る構成です。 もう一つの楽しみが「日替わり塩ラーメン」。私が見た日は蛸煮干しでしたが、仕入れで内容が変わるので、行くたびに別の一杯に出会えるのが魅力。連日通っても飽きにくいので、近くに泊まる人や地元の人にも相性がいいと思います。初回は牡蠣しじみ、2回目は日替わり…みたいな頼み方が個人的におすすめです。 お腹に余裕があるなら「牡蠣しじみ×チャーシュー丼セット（1700円）」も候補。炙りチャーシュー丼が付くので、観光で歩き回る日にはちょうどいいボリューム感でした。逆に軽めに済ませたい日は単品1200円のラーメンだけでも満足度は高いです。 注意点も少しだけ。支払いは現金のみなので、行く前に現金を用意しておくと安心。駐車場は2台分あり、場所が分からなければスタッフさんに確認するとスムーズです。入口が砂利なので、車椅子の方は介助や足元の確認があるとより安心だと思います。営業時間はランチ11:00〜15:00、夜は17:00〜スープがなくなり次第とのことなので、確実に食べたい日は早めの時間帯が無難でした。 店内は明治モチーフの落ち着いた雰囲気で、“最古の塩ラーメンを再構築”というコンセプトと空間がちゃんとつながっているのも良かった点。函館で塩ラーメンを探しているなら、「養和軒ぷらす」は一度は試してほしいお店です。
