Golden Berry Panna Cotta Recipe

Food scale needed

42 ml golden freshly squeezed berry juice (strained)

150ml cream

50g sugar

1.5g gelatin

1/4 tsp vanilla

Mix gelatin and golden berry juice until gelatin is dissolved, set aside to bloom.

Add sugar and cream to a pan on medium heat, right before it comes to a boil, add goldenberry and gelatin mixture. Stir for two minutes on low heat until gelatin is dissolved. Strain and pour into a greased container. Let chill for at least four hours or overnight.
