I've been on a mission to find meals that are both delicious and align with a low-carb, keto-friendly lifestyle, especially ones that make me feel good and contribute to weight loss. After a lot of trial and error, I've perfected my go-to zero carb chili. It’s a warm, savory meal that hits all the right spots, especially on a chilly day. What I love most is how it incorporates healthy, often organic, ingredients without compromising on that hearty chili flavor we all crave. Plus, knowing it's fat-free makes it even better for my weight management journey. Here’s my personal take on making the most amazing zero carb chili: Ingredients: 1-1.5 lbs ground beef (I usually opt for organic, grass-fed if I can find it, or a lean blend – simple truth works great!) 1 large onion, finely chopped 3-4 cloves garlic, minced 1 (28 ounce) can crushed tomatoes (check for no added sugar or carbs) 1 (14.5 ounce) can diced tomatoes (again, low carb, no sugar) 1 (6 ounce) can tomato paste 2-3 cups beef broth (ensure it's low sodium and no added sugars) 2-3 tablespoons chili powder (adjust to your spice preference) 1 tablespoon cumin 1 teaspoon smoked paprika 1/2 teaspoon cayenne pepper (for a little kick, optional) Salt and black pepper to taste Optional: 1 bell pepper (any color), diced (adds flavor and texture, very low carb) Optional: A few dashes of a zero-carb hot sauce for extra zing Optional garnishes: Shredded cheddar cheese (full-fat or reduced-fat), sour cream (full-fat), fresh cilantro, sliced jalapeños. Instructions: Brown the Beef: In a large pot or Dutch oven over medium-high heat, brown your ground beef. Break it up with a spoon as it cooks. Once fully browned, drain off any excess fat. This is key to keeping it on the fat-free side, or at least very lean! Sauté Aromatics: Add the chopped onion to the pot and cook until softened, about 5-7 minutes. Then, stir in the minced garlic and diced bell pepper (if using) and cook for another 2-3 minutes until fragrant. Bring the mixture to a gentle simmer. Simmer & Season: Reduce the heat to low, cover the pot, and let your chili simmer for at least 30 minutes, or even better, an hour or two. The longer it simmers, the more the flavors meld and intensify. Season with salt and black pepper to taste. If it's too thick for your liking, you can add a little more beef broth.
