Soup Sunday: Chili and homemade rolls
If you want a non traditional chili recipe this is the one for you. I think of soups as a nourishing meal you can fill with veggies so that’s how I make mine!
🌶️Ingredients:
1 medium yellow onion, chopped
3-4 ribs of celery, chopped
2 carrots, chopped
1 red bell pepper, chopped
1/2 or 1 spicy pepper of your choice if you like spice (I used 1 small orange habanero without the seeds)
1 green bell pepper, chopped
2 cups of kale, chopped
3-4 cloves of garlic, minced
1 pound ground beef
1/2 pound ground pork
1 can black beans
1 can kidney beans
1 can chickpeas
8 oz beef broth
40-45 oz tomato sauce
Measure with your heart and tastebuds for the following spices: onion powder, garlic powder, salt, pepper, paprika, cumin, thyme, chili powder, turmeric powder, ginger powder, cinnamon
🥫Directions:
1. Chop all of your veggies
2. Heat olive oil in a soup pot then add onion, celery, carrots, peppers and cook for about 3 mins. Then add in the garlic and cook for another minute
3. Add the ground beef and ground pork and cook it down and break it apart. Add your seasonings
4. Add in the kale and beans
5. Add the beef broth and tomato sauce
6. Bring to a simmer for about 20-25 mins, add any additional seasonings after tasting
7. Serve with sour cream, shredded cheddar cheese, and green onion
