The salad that I will make on repeat this summer 🍋
I love making this kind of salad when I want something really fresh and simple. The bell peppers and cucumber keep it super crunchy, and the chickpeas make it filling enough to be a light meal. The lemony Dijon dressing with a little maple butter (my secret ingredient) adds the perfect balance of tangy and sweet!
Here’s the recipe 👇
1. Dice 1/2 red onion, 1 red bell pepper, 1 yellow bell pepper, and 1 English cucumber.
2. Chop a handful of fresh parsley.
3. Drain and rinse 1 can of chickpeas.
4. In a large bowl, combine the peppers, cucumber, parsley, and chickpeas.
5. In a small bowl, whisk 1 tbsp Dijon mustard, a dollop of maple syrup butter, lemon juice, salt, pepper, and oregano.
6. Pour the dressing over the salad and toss until everything is evenly coated.
7. Let it sit for a while, then serve.
☝️ Dice the veggies small and evenly. It helps every bite get a good mix of chickpeas, herbs, and dressing.
☝️ Let the salad sit for 10–15 minutes before serving. The chickpeas soak up the lemon Dijon dressing and the flavor gets even better.
