『ONZS（オンズ）代官山』を検索している人って、「結局どんなお店？」「コース内容や雰囲気は？」「どう頼むのが正解？」が知りたいことが多い気がします。私も行く前は情報が少なくて、ちょっとだけドキドキしました。 まず印象に残ったのは“ライブ感＆即興料理”の言葉どおり、最初から最後までシェフとの会話が料理に反映されるところ。コースはありますが、固定メニューを淡々と出す感じではなくて、「今日は軽めがいい」「魚を多めに」「スパイス好き」みたいな好みを伝えると、流れの中で微調整してくれるイメージでした。初訪問なら、来店直後のドリンクを選ぶタイミングで“食の好み（脂っこいの苦手、香草OK、苦手食材）”だけでも一言伝えるのがおすすめです。 料理は、和食・フレンチ・和×仏の創作の3ジャンル。実際に食べると境界がいい意味で曖昧で、「これって和食？フレンチ？」と考えるのが楽しいです。例えばロワイヤルは、コンソメのジュレに“お出汁”を重ねていたり、魚料理のソースに焦しバターとエシャロットが使われていたり。バターや油を控えめにしていると聞いて、軽さはあるのに満足感がちゃんとあるのが不思議でした。 写真でも目立つ胡麻豆腐は、口当たりがとにかくなめらか。薬味やきのこ系の添え物とも相性がよくて、最初の数品で一気に期待値が上がります。ご飯ものの鰻ひつまぶしは、終盤でも重すぎず、締めとしてきれいにまとまる感じ。お酒を合わせるなら、岐阜の地酒（蓬莱など）が置いてあるのも“ONZSらしさ”だと思いました。 あと、場所は代官山・渋谷・恵比寿から徒歩圏で、ビルの3F。初回は地図を見ながら行くのが安心です。店内は“大人の居酒屋”という言葉がしっくりくる落ち着いた空気で、女子会にもデートにも寄せられる雰囲気。静かすぎないので、会話がしやすいのも良かったです。 最後に、注文で迷ったら「おまかせで、好みだけ伝える」が一番ONZS（オンズ）っぽい楽しみ方だと思います。即興で“自分のための一皿”が出てくる体験は、検索して気になっている人にこそ刺さるはず。次は季節を変えて、また違う食材の即興も見てみたいです。
