銀座にある『鮨 冨味』は、隠れ家的な雰囲気と木目調の趣深い空間が特徴で、全8席の檜カウンターのほか個室も充実しており、30席以上あるそうです。私も訪れた際は、鮮度抜群の旬の食材を用いたおまかせコースを堪能しました。特に印象的だったのは、夏にぴったりのとうもろこしの擂り流しで、トマトやおくらが添えられた涼やかな味わいが体に染みわたるようでした。 大将の包丁捌きはまさに芸術作品のようで、見た目の美しさもさることながら、食感の異なる素材が巧みに組み合わされた卵黄巻きが忘れられません。海ぶどうの弾ける食感と長芋の粘り、濃厚な卵黄のハーモニーは、噛むたびに味の変化を楽しめる贅沢な一貫でした。 さらに、ホタテの唐揚げは香ばしく旨味がぎゅっと詰まっていて新鮮な驚きがあり、太刀魚の焼き物には初夏の鬼灯（ほおずき）とフルーツトマトが添えられ、脂ののった白身と甘酸っぱいフルーツの妙を引き出していました。食べ進めるうちに、江戸前鮨の伝統を守りつつも新しい発想を取り入れた大将の探究心と技術力の高さがひしひしと伝わってきました。 飲み物も日本酒やワインはもちろん、ノンアルコールの充実したラインナップがあり、お鮨とのペアリングを大切にしている点も好印象です。全体的に、リラックスできる「和」の空間と大将の気さくな人柄も相まって、特別な日や大切な会食、女子会やデートにぴったりの場所と感じました。銀座の喧騒から少し離れ、目でも舌でも楽しめる美しい江戸前鮨をゆったり堪能したい方におすすめです。
