I've noticed that vinegar pickles are my go-to when I need a quick fix for sandwiches or snacks, while fermented pickles are perfect for health-conscious friends and family who appreciate the probiotic qualities. Plus, fermented pickles add an interesting 'wild' character to dishes that vinegar can’t mimic. A piece of advice for home canners—if your pickles are vinegar-based and acidity is high, water bath canning usually suffices. But if you're fermenting and not adding vinegar, always opt for pressure canning to maintain safety.
