creamy mushroom pasta (easy dinner recipe) 🍄‍🟫✨

Sharing 5 of my all time favorite pasta recipes! These are all delicious, family tested weekly staples that are easy to make. Perfect to use for any mushrooms that are going bad.

Ep # 4: Mushroom Alfredo 🍄‍🟫✨

- 1 1/2 cups rigatoni pasta

- 1 tablespoon olive oil

- 1 medium white onion, chopped

- 1 cup mushrooms, roughly chopped (I used baby bella mushrooms)

- 2 tablespoons unsalted butter

- 3 to 4 garlic cloves, minced

- 1/3 cup white wine

- 2 cups heavy cream

- 1/3 cup parmesan cheese

- 1/4 teaspoon pepper

- Salt to taste.

- Pasta water (optional)

- Fresh parsley, chopped (optional)

Directions:

1. Start by cooking pasta until al denté in boiling salted water.

2. Heat a pan on medium heat with olive oil. Add onions. Sautée until fragrant.

3. Next, add the mushrooms. Cook for an additional 3 to 5 minutes.

4. Add the butter and garlic. Cook until garlic is fragrant. Next, add white wine and simmer until it reduces by half.

5. Add heavy cream and parmesan cheese. Use a whisk or a spatula to mix, make sure there are no clumps. Let it simmer until thickened.

6. Add the cooked pasta to sauce along with a small amount of pasta water (optional) and mix well.

7. Serve immediately with more Parmesan and fresh parsley. Enjoy!
