3 cups cold cooked jasmine rice (day-old)
2 tbsp neutral oil (peanut, avocado, or canola)
2 large eggs, lightly beaten
1 small onion, finely diced
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, corn, etc.)
½ cup cooked protein (shrimp, chicken, tofu, or leave out)
3 tbsp soy sauce
1 tbsp oyster sauce )
1 tsp sesame oil
½ tsp brown sugar
2–3 green onions, sliced
white pepper, to taste
Heat 1 tsp oil in a large wok or skillet over high heat. Scramble eggs until just set, remove and set aside. Add more oil, sauté onion until golden, then add garlic and cook 30 seconds. Toss in protein and cook through, then add vegetables and stir-fry 1–2 minutes.
Add remaining oil, then the cold rice. Spread into an even layer and let sit 20–30 seconds before stirring to get light char. Repeat once or twice. Push rice aside, pour soy sauce, oyster sauce, and sugar around the pan edges, then mix to coat. Return eggs, add sesame oil, white pepper, and green onions. Toss and serve hot!!!
