🥐 Pillowy Stuffed Buns (Home-Style & Cozy)
I’m from Belarus, and this is how we make soft stuffed buns at home 🤍
Today I’m using a classic filling I grew up with:
mashed potatoes with fried onions and braised cabbage (картошечка с луком и тушеная капуста). You can also use sweet fillings like Nutella or berries — this dough works for everything..
Do you have something similar in your culture, or is this new for you? 👀

Milk — 400 ml (warm)
Sugar — 200 g
Dry yeast — 13 g
Soft butter — 150 g
Flour — 650–700 g
Salt — 1 tsp
Filling:
Mashed potatoes + fried onions
Braised cabbage
Egg wash:
1 egg yolk + a little milk

3. Knead until soft and fluffy (not sticky)
4. Rest dough 30 min in a warm place

Beyond the classic filling of mashed potatoes, fried onions, and braised cabbage, these stuffed buns can be wonderfully versatile. Many cultures have their own versions of stuffed bread, and experimenting with sweet or savory fillings can be a fun way to customize the recipe. For example, sweet fillings like Nutella or fresh berries add a delightful contrast to the soft, pillowy buns, making them perfect for breakfast or dessert. When shaping the buns, make sure the dough is elastic and not too sticky, which helps it hold the filling better and prevents leaks during baking. The egg wash not only gives the buns a beautiful golden crust but also helps keep them moist inside. Baking at 356°F (180°C) for 30-40 minutes ensures they are cooked through while staying tender. I found that resting the dough twice – once after kneading and again after shaping the buns – really enhances the texture, resulting in a fluffier, lighter bun. Also, using warm milk activates the yeast better for a good rise. Try pairing these buns with soups or salads for a comforting meal, or enjoy them on their own as a satisfying snack. Whether you stick to the traditional Slavic fillings or explore fusion flavors, these homemade stuffed buns bring a cozy, inviting flavor to any table.
