There's something so therapeutic about transforming simple sugar cookies into edible works of art. And when it comes to decorating, a good royal icing recipe is an absolute game-changer. I’ve found that incorporating light corn syrup into my royal icing is the secret to achieving that beautiful, glossy finish and a smoother consistency that’s much easier to work with. No more super brittle icing that cracks easily! So, why add corn syrup to royal icing? Beyond the gorgeous shine it imparts, corn syrup gives the icing a slight elasticity, making it less prone to breaking or chipping once dry. It also contributes to a softer bite, so your beautifully decorated cookies aren't like biting into a rock! This makes flooding much smoother and helps the colors blend seamlessly without streaks. My recipe, which uses powdered sugar, warm water, light corn syrup, and vanilla, ensures your icing is not only delicious but also incredibly user-friendly. When you’re making your batch, remember a few key tips for success. Always start with sifted powdered sugar to avoid lumps. Gradually add your warm water until you reach your desired consistency. For outlining, you’ll want a thicker consistency that holds its shape, almost like toothpaste. For flooding, a thinner, runnier consistency that settles smoothly is ideal – it should slowly disappear after a count of 10-15 seconds when you drizzle some icing back into the bowl. Don't overbeat your icing, as this can incorporate too much air, leading to bubbles and a less smooth finish. A stand mixer on low speed or hand mixing is usually perfect. Adding colors is another fun part! Use gel food coloring for vibrant hues without thinning your icing too much. Remember, a little goes a long way. I love seeing my kitchen counter filled with festive designs like the red cars carrying Christmas trees, classic green Christmas trees with sprinkles, and delicate white or purple snowflakes. It's truly inspiring! Once your cookies are decorated, proper drying is crucial. Let them air dry completely, ideally for several hours or even overnight, before stacking or packaging. This prevents smudges and allows the icing to harden perfectly. If you have extra icing, you can store it in an airtight container in the fridge for up to two weeks. Just give it a good stir before using again, adding a tiny bit of water if needed to regain consistency. Trust me, with this corn syrup hack, your holiday cookie decorating will be taken to the next level!
