หลายคนเห็นคำว่า “หัวครก” แล้วงงว่าคืออะไร—ตอนแรกเราก็งงเหมือนกันค่ะ พอได้ชิมถึงเข้าใจเลยว่าทำไม “ขนมหัวครก/หัวครก” ถึงเป็นขนมพื้นบ้านที่คนใต้ภูมิใจมาก เพราะมันคือเม็ดมะม่วงหิมพานต์ที่เอามาเคี่ยวคลุกกับความหวานแบบบ้านๆ (ส่วนใหญ่จะเป็นน้ำตาลโตนด หรือบางเจ้าใช้น้ำผึ้งรวง) จนเคลือบเงาๆ สีทองน้ำตาล ดูเหมือนคาราเมลแต่หอมกว่า สิ่งที่ชอบคือ “วิธีเสิร์ฟแบบดั้งเดิม” หลายร้านยังหยอดขนมที่เพิ่งเคี่ยวร้อนๆ ลงบนใบมะม่วงหิมพานต์เป็นแผ่นๆ ให้เป็นชิ้นพอดีคำ ช่วยกันขนมติดกันและดู eco-friendly มาก เวลาเห็นขนมหัวครกหลายชิ้นวางบนใบมะม่วงหิมพานต์สีเขียวคือสวยน่ากินสุดๆ (ขอแอบกระซิบว่าใบเอาไว้รอง ไม่ได้ทานนะคะ) รสชาติของขนมหัวครกจะออกหวานหอม มีความหนึบเล็กๆ จากน้ำตาลที่เคี่ยวจนได้ที่ แล้วตัดด้วยความมันของเม็ดมะม่วงหิมพานต์ กินเพลินมาก แบบหยิบชิ้นเดียวไม่เคยพอ สำหรับเรามันคล้ายขนมเคลือบน้ำตาล แต่เอกลักษณ์คือกลิ่นน้ำตาลโตนดและกลิ่นควันฟืน (ถ้าเป็นเจ้าเคี่ยวด้วยฟืนจริง) จะหอมละมุนกว่าที่คิด ถ้าใครกำลังจะซื้อเป็นของฝาก แนะนำให้สังเกต 3 อย่างนี้ค่ะ 1) สีและความเงา: ควรเป็นสีน้ำตาลทองเงางาม ไม่ไหม้ดำ และไม่ดูแฉะจนเกินไป 2) กลิ่น: ควรมีกลิ่นหอมของน้ำตาลโตนด/น้ำผึ้งรวง และบางเจ้าจะมีหอมควันฟืนเบาๆ 3) เนื้อสัมผัส: เคลือบหนึบๆ แต่ไม่แข็งโป๊ก กัดแล้วไม่ติดฟันจนเกินไป แหล่งที่ได้ยินว่าดังๆ จะอยู่แถบพัทลุง สงขลา นครศรีธรรมราช (หลายที่เป็น OTOP ด้วย) ถ้าไปเที่ยวใต้แล้วเจอคำว่า “ขนมหัวครก” อย่าลืมลองค่ะ เป็นขนมโบราณหาทานยากที่อร่อยแบบเรียบง่าย แต่มีเรื่องราวและภูมิปัญญาท้องถิ่นเต็มๆ
