... Read moreWhen preparing a pork roast, choosing the right spices makes all the difference. I personally love adding crushed red pepper, similar to the Cajun blend mentioned, to give the dish a bit of a kick without overpowering the natural flavors of the pork. After seasoning and searing the roast to lock in juices, tossing potatoes and vegetables like peppers, carrots, onion, and garlic in oil and spices before adding them to the pot helps everything caramelize beautifully during roasting. One tip from my experience is to use a heavy, oven-safe pot with a lid to mimic a slow-cooker effect in your oven. This traps moisture and helps the meat stay tender while the veggies roast to tender perfection. Depending on your preference, you can use either yellow or red potatoes—both hold up well. Also, don't discard the liquid left in the pan! It is packed with flavors from the roast and seared vegetables. After the cooking time, I like to whisk in a small amount of flour or cornstarch with some broth or water to make a simple, hearty gravy that ties the whole dish together. This step elevates a straightforward roast into a cozy and satisfying meal. For those on a budget, this method is great because it lets you cook protein and vegetables together in one pot, reducing cleanup and energy use. Plus, using seasonal vegetables can help keep costs down while providing variety. Overall, this recipe is very forgiving and adaptable. Whether you use a pork or beef roast or adjust seasoning levels, the technique remains the same. It’s a perfect meal for family dinners or meal prepping for the week.
