Ingredients

- 3/4 cup raw soursop pulp, seeds removed

- 3/4 cup melted coconut butter or full-fat coconut cream

- 1–1½ tbsp coconut nectar or maple syrup

- pinch sea salt

- 1/2 tsp tsp vanilla

- Squeeze of lime juice

Agar activator (gelatin substitute)

- 1/2 tsp agar agar powder (not flakes)

- 1 cup water

Directions:

1. Blend the soursop pulp, coconut cream, sweetener, vanilla, salt & lime. Keep in the blender.

2. In a small saucepan, whisk agar + water. Bring to a gentle boil. Boil for 1 full minute, whisking continuously. Remove from heat, slightly cool down (but still very warm) and add to the soursop & coconut mixture. Blend again for 10 seconds and immediately pour into ramekins.

Refrigerate overnight for best results. Serve with other fruit or enjoy as is!
