These Buffalo Chicken Biscuit Cups are a perfect appetizer and finger food. They are a wonderful appetizer addition to any spread - perfect for the holidays, or really any gathering! Here’s how they come together.

Ingredients

- 1 can of flaky layered biscuits

- 2 cups shredded, cooked chicken (I used a rotisserie chicken)

- 3/4 cup of your favorite Buffalo sauce

- 4oz plain whipped cream cheese

- 1/4 cup plain Greek yogurt

- 1/4 cup of Ranch or Blue Cheese dressing

- 1/2 cup shredded cheddar cheese (plus extra for topping)

- Optional topping: thinly sliced celery and minced parsley combined, or green onion.

Directions:

1. Preheat oven to temperature listed on biscuit directions.

2. In a mixing bowl, mix chicken, buffalo sauce, cream cheese, Greek yogurt, dressing, and shredded cheddar. Mix until fully incorporated. Set aside.

3. Using your fingers, evenly split each biscuit in half horizontally. Each biscuit should give you two circular rounds. Gently stretch each round to make them slightly larger.

4. Place biscuit rounds into a silicone muffin pan or a sprayed muffin/cupcake pan. Press the cup down, forming into little cups.

5. Fill each cup with the buffalo chicken mixture. Once filled, top with shredded cheddar.

6. Bake until golden and melty to your liking (about 15 minutes, but check them!)

7. Top with topping of choice or enjoy as is!
